Skin packaging is also be widely used in the cheese industry. Cheese skin packaging (Vacuum Skin Packaging: VSP)uses clear skin packaging film that shrinks and seals tightly around cheese and a backing (cardboard/tray), creating a vacuum seal that extends shelf life, preserves flavor/color, prevents leakage, and offers high visibility for an attractive, protected product. It removes air to stop spoilage, to fit the cheese's shape perfectly, even irregular ones, while allowing for vertical display and easy opening. Barrier skin packaging film can effectively prevent cheese from becoming moldy and spoiled.
Vacuum skin packaging for cheese can be evaluated for blocks, wedges, portions, snack-size pieces and selected sliced or specialty products. Because cheese behavior varies, the final structure should always be matched to the product’s moisture, fat content, maturation stage, gas release, storage temperature and target shelf life.
During the VSP process, the top film is heated and formed over the product under vacuum. It follows the cheese contours and seals to the open area of the base, creating the characteristic “second-skin” appearance. Compared with a loose overwrap, cheese skin packaging provides better product fixation and a clearer view of the shape, cut surface and portion size.
♦ Hard and semi-hard cheese blocks
♦ Retail wedges and cut portions
♦ Snack-size cheese pieces
♦ Selected sliced or layered cheese formats
♦ Irregularly shaped specialty cheeses
♦ Processed cheese portions and other solid dairy products
Barrier Level and Product Respiration
High barrier cheese packaging may be useful when limiting oxygen transmission is a priority, but the required barrier cannot be selected from cheese name alone. Product formulation, ripening behavior, expected shelf life and distribution temperature should be reviewed together.
Moisture, Oil and Seal-Area Control
Moisture or fat on the tray flange can affect seal performance. Tray filling, product placement and flange cleanliness should be controlled before sealing, especially for fresh-cut or high-moisture products.
Product Height and Film Formability
Film draw and tray depth must accommodate the highest point of the product without excessive thinning, bridging or stress around sharp corners. Blocks, wedges and irregular portions may require different film and tooling combinations.
Opening and Retail Presentation
Clear film supports product visibility, while close product fixation can help maintain an orderly display during handling. If easy opening, vertical display or a particular merchandising format is required, it should be included in the packaging trial and seal validation.
A reliable cheese pack depends on the compatibility of all three components. Start with a suitable vacuum skin packaging film based on barrier, forming and sealing requirements. Match it with food skin packaging trays that provide the correct dimensions, flange condition and sealing surface. The selected vacuum skin packaging machines must then support the tray format, product height, film width and required output. Changing one component can affect the others. For example, a new tray material may require a different seal layer or process window, while a taller cheese portion may change film draw and tooling requirements.
